Recipe Of The Month

Just Grill It

Ingredients:

  • 2 T-bone AAA beef steak
  • Chef François Classic Seasoning
  • 6 Tbsp olive oil
  • 6 garlic cloves, divided, chopped
  • 2 aluminum pie plates
  • aluminum foil
  • ½ orange pepper, mirepoix (stew size)
  • ½ red pepper, mirepoix
  • 1 green pepper,mirepoix
  • 1 red onion,mirepoix
  • 1 zucinni, mirepoix
  • 15 green beans, whole
  • 3 medium potatoes, mirepoix
  • ¼ Lb + 1 Tbsp salted butter, room tempurature
  • 2 dash cayenne
  • 2 dash balsamic vinegar
  • small bunch each herb, basil, parsley, rosemary, sage, thyme, oregano, mint, chives

  • Process:

    Herb Butter
    1) Mix butter and chopped herbs, 2 cloves garlic, cayenne, balsamic vinegar, set aside in cool place.

    Potatoes
    1) Heat BBQ to 325º
    2) In small mixing bowl, combine 2 Tbsp olive oil, 1 tsp chopped rosemary, 2 cloves garlic, ¼ tsp Chef François Classic Seasoning and potatoes, toss well. Pour into one pie plate. Cover with foil (shiny side down). Place on BBQ, stir every 5-7 minutes for 30 minutes or desired crispness. Remove potatoes from heat, set aside.

    Steak
    1) Increase BBQ temp to 350º
    2) Coat with 1 tsp olive oil and ½ tsp Chef François Classic Seasoning each steak.
    3) Cook until desired doneness.
    4) Remove from heat, serve with herb butter.

    Vegetables
    1) In medium mixing bowl combine vegetables and remaining garlic. Coat with remaining olive oil. Sprinkle with ¼ tsp Chef François Classic Seasoning.
    2) Toss well and place in aluminum pie plate.
    3) Add 1 Tbsp butter on top, cover with foil (shiny side down).
    4) Place on BBQ for maximum 5 minutes.
    5) Remove from heat and serve.
